Protein Muffins aka "Muscle Muffins"

These protein muffins aka "Muscle Muffins" are the bomb! Definitely one of our favorite recipes for breakfast. These little beauties are super satisfying. They are packed with protein and so tasty. Give this one a try. You won’t be disappointed.

Here's what you will need:

8 egg whites (this is easiest if you buy a carton of egg whites, 8 egg whites is 1 1/2 cups)

1 whole egg

1 1/2 cup oats

1/2 cup Stevia or Splenda (I prefer Stevia)

1/2 cup cottage cheese

1/2 cup applesauce or 1 banana (we prefer the banana)

1 scoop Protein Powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon vanilla

Blueberries or any fruit etc that you would like to add to the muffins (we like to skip this additive only because they tend to make the muffins soggy)

*Blend all ingredients except the blueberries in the blender and pour into WELL GREASED muffin tins. Press blueberries into the muffin batter spreading evenly between all muffins.

*Bake at 350 for 20-25 minutes.

*Recipe will make 12 muffins.

The recommended serving is 3 muffins so you will have 4 days of protein packed muffins prepped when you make this batch. We really enjoy them with our morning cup of coffee. Muscle muffins leave us feeling full and energized. Bake up a batch and let us know what you think in the comments below.
